Sandwich shop has now transformed its garbage into art.

A small Chicago sandwich shop has gained headlines for pulling off an impressive feat for any restaurant: producing zero waste.

Over two years, chef owner Justin Vrany’s restaurant Sandwich Me In has produced eight gallons (30 litres) of garbage – the average amount of waste produced by a restaurant every hour, he says.

In more concrete terms, that’s equal to a 25kg bag of onions and about two dozen coffee cups. 

To become truly zero waste, Vrany then commissioned an artist to transform the garbage into a sculpture.

In addition to operating on renewable sources of energy and using locally sourced meat and produce, Vrany is a militant recycler and composter, taking waste home with him so that he can dispose of them responsibly. – AFP Relaxnews
